Chicken Satay
Ingredients:-
- ½ kg of chicken Thai (boneless)
- 1 inch of galangal (Thai ginger or can be used ginger)
- ½ of ¼ cup lemon grass (fine chopped)
- 4-5 nos. of kaffir lime
leaves (lemon leaves)
- 1 tablespoon of curry powder
- 1 tablespoon of Thai red
curry paste (easily available in market)
- ½ tablespoon of cumin powder
(jeera)
- ½ tablespoon of coriander powder
- 2 tablespoon of brown sugar
(can be used sugar)
- 1 cup of coc0onut oil (can
be used oil)
- 2 nos. of garlic cloves
(minced)
- Salt to taste
- 1 pkt. Of Bamboo skewers
- Water for soaking skewers
Preparation method:-
- Soak bamboo skewers into water
for one hour;
- Mince galangal & garlic.
- Wash chicken and cut into
long thin slices;
- Chopped the lemon grass and
kaffir lime leaves very fine;
- For marinate the chicken mix
galangal, garlic, lemon grass, lime leaves, curry powder, curry paste,
coriander powder, cumin powder, brown sugar, salt & coconut oil into a
mixing bowl;
- Marinate the chicken into
satay marination for at least 2 hour;
- After that thread marinated
chicken onto skewers:
- Preheat the griller or hot
plate for medium high heat;
- Grill the chicken for at
least 4to 5 min per side;
- Serve hot and enjoy.
