Chicken satay

Chicken Satay

Ingredients:-

  1. ½ kg of chicken Thai (boneless)
  2. 1 inch of galangal (Thai ginger or can be used ginger)
  3. ½ of ¼ cup lemon grass (fine chopped)
  4. 4-5 nos. of kaffir lime leaves (lemon leaves)               
  5. 1 tablespoon of curry powder
  6. 1 tablespoon of Thai red curry paste (easily available in market)
  7. ½ tablespoon of cumin powder (jeera)
  8. ½ tablespoon of coriander powder
  9. 2 tablespoon of brown sugar (can be used sugar)
  10. 1 cup of coc0onut oil (can be used oil)
  11. 2 nos. of garlic cloves (minced)
  12. Salt to taste
  13. 1 pkt. Of Bamboo skewers  
  14. Water for soaking skewers

Preparation method:-

  1. Soak bamboo skewers into water for one hour;
  2. Mince galangal & garlic.
  3. Wash chicken and cut into long thin slices;
  4. Chopped the lemon grass and kaffir lime leaves very fine;
  5. For marinate the chicken mix galangal, garlic, lemon grass, lime leaves, curry powder, curry paste, coriander powder, cumin powder, brown sugar, salt & coconut oil into a mixing bowl;
  6. Marinate the chicken into satay marination for at least 2 hour;
  7. After that thread marinated chicken onto skewers:
  8. Preheat the griller or hot plate for medium high heat;
  9. Grill the chicken for at least 4to 5 min per side;
  10. Serve hot and enjoy.
