Simple Mayonnaise

Ingredients:-

  1. 1 Litter of salad / olive oil
  2. 8 nos. of egg yolks
  3. ¼ teaspoon of French mustard
  4.  25 Ml of Vinegar
  5. 1 nos. of lemon
  6. Seasoning to taste

Preparation method:-

  • Place yolk of eggs, vinegar seasoning well in a clean bowl & whisk well.
  • Add oil slowly, a little at a time, whisking continuously till all the oil is incorporated.
  • Finish the sauce by adding the juice of lemon and warm water. This is done to ensure coherence of the sauce and to prevent its turning or curdling. Mayonnaise is suitable for serving with cold fish, meat and hors d’oeuvres.

Special points to be noted:-

  • Do not expose mayonnaise to too low temperature after making it
  • Initially, the oil should not be added rapidly
  • Do not use congealed or too cold oil
  • The oil should be in proportion to egg yolk
  • Use hot water when necessary as it acts as a stabilizer
  • Cover the sauce with a lid and store it in a cool place.
