DANISH PASTRY
Ingredients
Flour 200g
Yeast 80 g
Sugar 8
g
Gluten 4g
Cold water 120 g
Fat 100 g
Salt 4
g
METHOD
- Mix yeast and sugar with water and put in proving chamber
- Mix flour, salt, gluten all together and cream the fat separately
- Make dough by using ferment yeast and cold water put dough in refrigerator for 5 min.
- Roll the dough with the rolling pin and apply fat in it and fold it by using book fold method & again put it in refrigerator for 5 min. and again roll it and make a book fold repeat this step for one more time.
- Roll it with rolling pin and cut the dough using cutter and make shape
- Put these in a baking tray bake it in oven at the temp. of 200 degree C for 15 min.
