For fast food preparation I am giving you three basic
marinades that can be used for any of the main meats chicken, mutton and fish
- For Traditional Indian Tandoori Flavour

Ginger Paste 1

Garlic Paste 2
tsp
Onion Paste 3

Garm Masala 1

Cooking Oil ¼

Salt to taste
- For Chinese Flavour
Ingredients
Chicken 1
kg
Vinegar ¾
cup
Soya sauce 2 tbsp
White Wine 2
tbsp
Seasme Oil (til ka oil) 1
tsp
Cooking Oil ¼
cup
Ginger Paste 1
tsp
Garlic Paste 2
tsp
Black Pepper 2
tsp
Salt to
taste
- For Western Flavour
Ingredients
Chicken 1
kg
Vinegar ½
cup
Lemon Juice 1
tbsp
White Wine 1
tbsp
Olive Oil 3
tbsp
Salt to
taste
Pepper 1
tsp
Spices to
taste
L.P. Sauce (Worcestershire sauce) 1 tbsp
Note: These basic marinades are flexible and all herbs should be dry ground and mixed with liquid part of the marinade. The marinades can be stored in a refrigerator for up to a week and can be re-used.
